    Description

    Sous toutes ses variantes, le baklava (baklawa en arabe) est la gourmandise par excellence dans les pays du Moyen Orient, en Turquie, dans les pays des Balkans et du Maghreb, un dessert qui rime avec festivité et convivialité.

    La pâte phyllo (ou les cheveux d’ange), le beurre (clarifié ou  non) et le sirop de sucre(ou miel) sont LES ingrédients de base du baklawa. A chaque pays sa manière de les façonner et de les garnir. Alors qu’au Maghreb noisettes et amandes sont à l’honneur, la pistache est Reine en Syrie et au Liban.

    Quand plaisir visuel et plaisir gustatif entrent en vive compétition, c’est que l’on est sans doute face à un magnifique assortiment de baklawas syriennes.

    Une liste non exhaustive des baklawas syriennes :

    -          Esh elbelbol  - littéralement  « le nid du petit rossignol » - , une appellation tellement poétique qui en dit beaucoup .. des petits nids de cheveux d’ange dorés et garnis de pistaches ou de noix de cajous entières puis imbibés d’un sirop parfumé à l’instar de tous les baklawas.

    -          Mabroumeh - littéralement « enroulé » - une gourmandise qui fait l’unanimité auprès des amateurs de baklawas ; et comment résister à cette généreuse bouchée de pistaches enroulée avec minutie de cheveux d’ange bien dorés ?

    -          Balloria – littéralement « vitrifié » -  un véritable pêché gourmand, une généreuse couche de pistaches parfumée prise entre deux fines couches de cheveux d’ange bien compactes, de quoi ravir à merveille  les amateurs de pâtisserie levantine..

    -          Lissan el asfour – littéralement  «la langue d’oiseau », une mignardise si fine et succulente, ou deux couches de pâte feuilletée renferment une riche farce de pistaches ou de noix de cajous.

    -          Kol w shkor – littéralement  « mange et remercie », et comment ? lorsqu’on savoure des mini- chaussons de pâte feuilletée enfermant une garniture de pistaches si fondante..

    -          Assabeh /roll – natures ou garnis, des petits roulés de pâte phyllo aromatisés à la fleur d’oranger ou à l’eau de rose, un pur bonheur pour les papilles..
